One of my favorite things to make is meatballs!
The whole family loves to eat them, they are easy to portion out (I get 7, my hubby takes 10, kids take 3-4). And meatballs are endlessly customizable! Italian (basil, oregano, garlic), Indian (cumin, coriander, turmeric), Thai (basil, garlic, chili paste).

🔑Fresh ginger and sesame oil are the key ingredients – so don’t skimp!
Carrot Ginger Turkey Meatballs
1 lb lean ground turkey
1 large egg
2 cups shredded carrots, about 3-4 large carrots
1 tbls coconut aminos
1 tbls fresh ginger, minced
3 green onions, sliced thin
2 tsp sesame oil
1/2 tsp sea salt
1/2 tsp pepper
Heat oven to 400 degrees. Mix all ingredients together.
Use a cookie scoop to form uniform meatballs then roll then in your palms to make them smooth.
Place on a lined cookie sheet and cook for 18-20 minutes.
Makes approximately 30-31 meatballs. 7 meatballs/serving = 7gC/10gF/20gP
⏰Time-saver tip: Use pre-shredded carrots.
